The GI is formally defined as a measure of the postprandial (after-meal) glucose response following a 50-gram load of available carbohydrate from a food, providing a standardized comparison with glucose. The concept was originally inspired by the dietary fiber hypothesis — the idea that fiber would reduce the rate of nutrient absorption and increase the value of carbohydrate foods in maintaining health.

How GI Affects Blood Sugar

When you eat carbohydrate-containing foods, your digestive system breaks them down into simple sugars, primarily glucose. This glucose enters your bloodstream, and your pancreas releases insulin — a hormone that helps glucose move from your blood into your cells, where it is used for energy.

High-GI foods cause a rapid surge in blood glucose, followed by a quick drop. Over time, healthcare providers believe these constant surges and retreats may contribute to insulin resistance. Low-GI foods, by contrast, produce a slower, flatter blood glucose response, giving the body more time to respond with appropriate insulin production.

Glycemic load takes both the GI and the actual carbohydrate content of a serving into account. It is calculated using the formula: GL = (GI × grams of carbohydrate per serving) ÷ 100.

For example, watermelon has a high GI of 76, but a typical 1-cup serving contains only about 11 grams of carbohydrates, giving it a relatively low glycemic load.   3. Watch your portion sizes — even low-GI foods can raise blood sugar if eaten in large amounts.

  5. Choose whole foods over processed ones — whole fruit over fruit juice, whole grains over refined grains.

Limitations of the Glycemic Index

While the GI is a useful tool, it has some limitations:

  • Mixed meals: We rarely eat foods in isolation. The GI of a food can change when combined with other foods in a meal.

  • Serving size: GI doesn't account for how much of a food you typically eat — which is why GL was developed.

  • Nutrient quality: A low GI doesn't automatically mean a food is healthy, and a high GI doesn't mean it's unhealthy. Overall nutritional quality matters too.
